10 Uses for Leftover Broccoli

Since broccoli offers so many vital nutrients, vitamins, and minerals and is also now known to fight cancer, any leftover broccoli is like gold. Finding creative ways to use that broccoli is easy enough; here are some ideas.

  1. Broccoli that is diced and chopped can be added to eggs, cheese, and potatoes and enjoyed as a breakfast wrap.
  2. If you enjoy making homemade dough, you know that it is simple enough to make. Make your die, place it in a pie plate and add broccoli, eggs, cheese, salt and pepper to taste and bake in a 350 degree oven for 45 minutes. This will give you a delicious quiche type recipe that you can enjoy for breakfast or even lunch.
  3. Broccoli, angel hair pasta, and shrimp are a perfect combination for a quick meal. Toss a salad and serve with some dinner rolls and you are good to go for dinner.
  4. If you know how to make your own dough or if you prefer, you can buy frozen dough and let it rise according to package directions. Once you have your dough set in place, add your broccoli, favorite cheese, roll and bake in the oven for approximately 45 minutes or until dough is golden brown. The cheese inside will melt. You can add this as a side dish or even as a lunch staple.
  5. Calzones are another great way to use broccoli. If you have small children, they will love helping you make a calzone. Using your own dough or the ready-made kind, spread broccoli, ricotta cheese and Romano cheese onto one side of a round section of dough. Fold one side over to the other, place slit marks on top and press the tines of the fork into the edge. Spray with baking spray and bake in your oven for approximately 30 minutes on 350 degrees.
  6. Add broccoli to other vegetables to make a vegetable salad. Vegetables such as zucchini, tomato, and red beans mixed in a vinaigrette dressing are a perfect way to use that broccoli and keep it healthy, as well.
  7. Some people like to use their food processor along with cream of broccoli soup added to leftover broccoli to create a scrumptious creamy broccoli soup.
  8. Leftover broccoli is great for dipping. Here you can get creative with your dipping sauces, as well. You can create a Caesar sauce or a ranch dip, or even a teriyaki dip.
  9. Make your own homemade pizza and use that broccoli as a great topping.
  10. If you have leftover turkey or chicken, you now have the beginnings of a great casserole.

 

If your family is not crazy about eating fresh or cooked broccoli by itself, they may enjoy it more if combined with other ingredients in a casserole or other dish. Don’t toss those valuable nutritional benefits when you can add leftover broccoli to just about any dish.
